Today is day 1 of the 2012 Paleo Challenge! For the next 60 Days participants will be making some pretty significant changes to their diet and lifestyle in the interest of looking, feeling and performing better. Whatever your reasons for joining this year’s challenge we wish you the best and keep checking out the blog for info to help you reach your goals as well as updates on things like the Rest Day Dinners and the potlucks!
The transition to Paleo can often be challenging but remember you aren’t doing this alone but with over 80 other people. The coaches, your fellow athletes and this blog are all invaluable resources and here to help your achieve your goals. Happy New Year to everyone in the CFSBK fam. Highly fueled by alcohol at this moment, but only tequila after midnight, since its technically Paleo. On a side note, saw Peter's log book on Saturday and laughed for an undetermined amount of time (those who have seen it know what I mean). Peter, you cheeky bastard. Feliz Aรฑo Nuevo bitches!!!!

I actually rang out 2011 fairly Paleo, since the friends who threw the party I went to are Paleo too. I brought this side dish, which turned out to be excellent, if anyone wants to try it:
Roasted Vegetable Salad with Anchovy-Parsley Pesto
Source: Wall Street Journal
Serves 4
ROASTED VEGGIES
1/2 lb carrots, peeled and cut into 1/4" sticks
1/2 lb parsnips, peeled and cut into 1/4" sticks
1/2 lb rutabaga, peeled and cut into 1/4" sticks
2 tablespoons olive oil
1 tsp kosher salt
Heat oven to 500 degrees. In a large mixing bowl, toss vegetables with olive oil and salt. Spread on a baking sheet and roast, flipping halfway through, until tender and charred in places, about 15 minutes.
PESTO
1/2 cup tightly packed flat-leaf parsley leaves
1-1/2 tablespoons capers, drained and rinsed
1 anchovy fillet, drained
1-1/2 cloves garlic
1/4 cup olive oil
Pinch of freshly ground black pepper
Puree all pesto ingredients in a food processor until finely chopped (the mixture should be bright green and slightly soupy in texture).
Toss roasted vegetables with 2 tablespoons of the pesto sauce. (Or use all of it for a more strongly flavored dish.) Season to taste with salt and pepper. Save any leftover sauce for another use.
SALAD
3-1/2 cups bitter salad greens, such as arugula, watercress, or mizuna
3/4 cup shaved semi-firm aged goat cheese, such as drunken goat or
goat gouda
1-1/2 tablespoons olive oil
2 teaspoons lemon juice
Toss the salad greens with the shaved cheese. (Cheese can easily be omitted to be fully Paleo.) Mix olive oil and lemon juice together well. Dress the salad with the vinaigrette. Pile the dressed roasted vegetables on top of the salad and serve.

I had eggs and I know it's dairy but I am away and they had no salmon and no other good choices. Bunch of veggies. No milk in my coffee, no cheese in the eggs. Virgin bloody Mary, super spicy. If I can't get kicked in the teeth by vodka, it may as well be Tabasco! Lots of vitamin d. Have a great day!

Wait…I thought eggs were A-OK?
I'm doing steak and eggs this morning. And some fish oil horse pills. I made the mistake of buying mine at Trader Joe's. I saw "1000 mg" on the package and they were $7.99 for 180 softgels so I jumped at them. Turns out that's 1000 mg salmon oil, only 200 mg per softgel of EPA/DHA. Which means I need TEN horse pills a day just to get to 2 mg. Shoot me now (and I'll buy the ones SBK is selling once I run out, I promise).

Today's Breakfast:
4 (Non-Dairy) Eggs scrambled with Pico De Gallo and green onions with water and Fish Oil.
I'm a big fan of the pre made pico de gallo and salsa they sell at fairway. Makes breakfast WAY quicker and easier.

4 eggs scrambled with onion and bacon…iced coffee (touch of milk, im allowing myself this) and cinnamon. fish oil, multi and 2 big cups of coconut water (allowing myself this today, but then it is gone again till the day after my 30th birthday)

Happy New Year everyone! I am very happy to say I am not hung over! And while I am not joining the rest of the CFSB world with the paleo challenge, I am doing my own challenge… Mon thru Fri no electronic media that is not work related (this primarily means no tv) and 100% of meals home cooked. Also a more intensive focus on mobility and getting my body to a healthy ph level. Yay for challenges!

had my first paleo meal at prime meats. a medium rare steak, 2 eggs, side of bacon, and a little potato pie thing. my first time at prime meats and i ran into another CFSBKer there! very nice place and good food.

Are we suppose to take 4 of the fish oil pills (the ones we can get at the gym) or 2 a day?
